Lettuce soup: zuppa di lattuga
Lettuce soup with broad beans spring onions and chorizo
It is the time of year when there is a lot of produce in the garden and there is a special light and very tasty soup that combines a very of those ingredients with a little spice. Obviously the chorizo is not a normal addition to the Marche version but it helps give a bit of bite.
spring onions, bunch
400g veg stock
3 heads of lettuce
250g broad beans
salt and pepper
mint leaves to serve
melt the butter and and the finely slice onions and cook to soft not brown, about 5 minutes. pour in the stock and bring up to a boil and add the shredded lettuce and half the beans, cook on a gentle boil for 5 minutes more.
Blend in a food processor until smooth adding more stock if it gets too thick, and season. Blanch the rest of the beans. Fry the chopped chorizo in oil to crisp them up a bit and then add the beans and stir them in with the sausage and oil.
Serve the hot soup topped with the sausage and bean mix and a few torn mint leaves.
