Stewed Peas: Stufati Piselli

Stewed Peas with Onion and Garlic Recipe

This stewed peas with onion and garlic recipe is perfect for the new season peas but since they are cooked for a while older peas are equally as good in this recipe. You will not though be able to get away with frozen peas since they will tend to loose their firmness with the prolonged cooking, so if you have to decrease the cooking time to 10 mins or so and check they don’t turn to a mush.

500 peas
1 large onion, chopped
2 large cloves of garlic, crushed and finely chopped
a little butter
Salt and pepper
couple of sprigs of oregano, chopped
cup of vegetable stock

Fry the onion and garlic slowly in a pan until the onion is soft, ten minutes or so, don’t let them brown, chuck in the peas and season with salt, pepper and oregano. Add the stock and allow to heat up. Cover the pan and simmer away very slowly for 30 mins or so, giving it an occasional stir.
This is a simple and light side dish, good with roast or saute potatoes and grilled or roast meat.
