Elderberry cordial

The extraordinary summer heat seems to have faded into a gentle September here in Le Marche. But we still have the preserves made from the bumper crops that the fine weather of the summer provided. Earlier in the summer we published a blog detailing the elderflower cordial that was made from the flowers of the Elder. In mid summer this versatile tree produced a fantastic crop of berries. While a less subtle flavour that the elderflower, the elderberry cordial has a little more body which makes it an excellent mixer for those autumn and winter drinks where its flavour is a delightful reminder of the summer heat.

Elderberry cordial Recipe


  • 1 kg elderberries 
  • Demerara sugar
  • Cinnamon Sticks
  • 1 Lemon


Place the elderberries in a saucepan, add water to cover and simmer for 20 mins. Strain the juice and add 500g of sugar and the juice from half a lemon for every litre of juice. Put the pan back on the heat over a low flame and add a cinnamon stick, stir until the sugar is dissolved. When cool pour into sterilised bottles, filling to the rim to exclude air. they should keep in the fridge for 6 months.
